ANZAC BISCUITS | KETO FRIENDLY





Good Morning, I hope everyone had a lovely weekend. Last week we had celebrated Anzac 
Day 'Lest we forget" Almost every Australian enjoys an Anzac Biscuit around this time of the year. I had trouble finding a recipe that was low carb and sugar-free, but I stumbled across Aussie Keto Queen recipe and adjusted the ingredients slightly. I really enjoyed making these and also they were quick, it's a great recipe to do with the children.My feedback would be is to add more rice malt syrup and a little more stevia. Otherwise, these reminded me of the traditional ANZAC biscuit consistency. 


Ingredients:
1 cup almond meal 
1 cup desiccated coconut
1/4 cup shredded coconut
1 cup walnuts or almonds
50 grams butter
1/2 teaspoon stevia powder
2 tablespoon rice malt syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon water
2 eggs

Method:
  1. Preheat the oven to 180 Celsius degrees. Prepare baking paper on a baking tray
  2. In a mixing bowl, add almond meal, coconut and walnuts and mix to combine.
  3. Heat on medium-low in a saucepan. Add in the butter, stevia and vanilla. Let simmer for 5 minutes or until golden brown.
  4.  Remove from heat and add baking powder.
  5. Combine white and dry ingredients, and then add two eggs and mix.
  6. Roll into small balls and place into the baking tray.
  7. Bake for 20 minutes or until golden brown.
Makes 12-15 depending on size.
