Day 'Lest we forget" Almost every Australian enjoys an Anzac Biscuit around this time of the year. I had trouble finding a recipe that was low carb and sugar-free, but I stumbled across Aussie Keto Queen recipe and adjusted the ingredients slightly. I really enjoyed making these and also they were quick, it's a great recipe to do with the children.My feedback would be is to add more rice malt syrup and a little more stevia. Otherwise, these reminded me of the traditional ANZAC biscuit consistency.
Ingredients:
1 cup almond meal
1 cup desiccated coconut
1/4 cup shredded coconut
1 cup walnuts or almonds
50 grams butter
1/2 teaspoon stevia powder
2 tablespoon rice malt syrup
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon water
2 eggs
Method:
- Preheat the oven to 180 Celsius degrees. Prepare baking paper on a baking tray
- In a mixing bowl, add almond meal, coconut and walnuts and mix to combine.
- Heat on medium-low in a saucepan. Add in the butter, stevia and vanilla. Let simmer for 5 minutes or until golden brown.
- Remove from heat and add baking powder.
- Combine white and dry ingredients, and then add two eggs and mix.
- Roll into small balls and place into the baking tray.
- Bake for 20 minutes or until golden brown.
Makes 12-15 depending on size.
